I’ve never been much of a baker. However, now that we have our own home, I am trying new things. I am so excited to share a fun recipe that both and adults and children will enjoy! Have you tried Mint Chocolate Swirl Brownies?

My son and I have been in our new home for about a month and a half! I feel like there are a few little things I still need here and there, but overall, I feel completely at home! That seems to be all that matters to me.

With settling in, I am still figuring out where everything goes. My kitchen has 3 big appliances on the countertop, which I’m sure it could be more efficient. I recently bought an Instant Pot and have been making simple meals for my son and myself.

I love brownies! I have never baked a batch at home, but the idea of having leftovers and even crumbs to add as toppings to ice cream sound so delicious! My son and I love our ice cream. My son loves mint chocolate chip and we recently made Mint Chocolate Chip Dip!

I wanted to combine both brownies and mint, so we made Mint Chocolate Swirl Brownies! We are looking forward to making these again because my son loved them! I hope to make another batch, just so we have leftovers for ice cream! The brownies make an extra special treat, especially after dinner. We really don’t have dessert, so these would be a nice treat for us!

Here’s what you’ll need:

9×13 inch baking pan
parchment paper
fudge brownie mix
Mint Extract
Green Food Coloring – I found the Watkins Food Coloring Set at Target. This is perfect if you prefer a natural approach.
mini chocolate chips – You can go with Nestle Toll House or Market Pantry brand (made with natural ingredients).

Mint Chocolate Swirl Brownies

Ready for a delicious combination of Mint and chocolate? The Mint Chocolate Swirl Brownies will indulge your taste buds.

Brownie Ingredients:

  • 1 20 oz box fudge brownie mix
  • 2 large eggs room temp
  • 1/2 C vegetable oil
  • 1/4 C water

Mint Cheesecake Swirl Ingredients:

  • 1 8 oz block cream cheese softened
  • 1/4 C sugar
  • 1 large egg yolk
  • 1/4 tsp mint extract not peppermint
  • 4-5 drops green food coloring dark green
  • 2/3 C mini chocolate chips



  • Preheat oven to 350 degrees.
  • Line a 9×13 inch baking pan with parchment paper. (leave an overhang on all sides.)
  • Set aside.

Brownie directions:

  • Beat together the brownie mix, eggs, oil, and water.
  • Continue to mix until smooth.
  • Take out 1⁄3 cup of the batter.
  • Set it aside.
  • Pour the remaining of the batter into prepped pan.

Cheesecake Swirl directions:

  • Beat the softened cream cheese, sugar, egg yolk, mint extract, and food coloring in a medium bowl with an electric mixer until the mixture is completely smooth. (about 1 minute).

  • Add the mini chocolate chips, stir in by hand.
  • Measure out large spoonfuls of the cream cheese mixture.
  • Dollop the spoonfuls on top of the prepared brownie batter. Next, add the dollops of rest of the brownie batter to the top of the brownie batter.
  • Using a knife create a swirl effect to mix the cream cheese mixture and the additional brownie batter.
  • Sprinkle additional mini chocolate chips on top.
  • Bake brownies at 350 degrees for 35-40 minutes. (Or until a toothpick comes out almost clean)
  • Remove from the oven.
  • Set aside until they have cooled.
  • Cut them into squares.
