Fresh Strawberry Cobbler

Strawberry season is picking up in our area of North Carolina. My daughter’s favorite snack is sliced fresh strawberries and popcorn. She’s the kind of gal that likes a little salty with her sweet.

I keep several pints of strawberries in my fridge. We even have a field-trip with her preschool class coming up. We get to tour a local Strawberry Farm and pick our own berries to bring home.

The problem with these sweet berries is that when they’re in season, the go bad quickly. When I overshoot my grocery list and bring too many strawberries home, I have to act fast and find other ways to incorporate them.

My favorite recipe to use with fresh strawberries is Strawberry Cobbler. This desert was a staple in my grandmother’s home and I can still smell the sweet scent traveling through her home and catching my nose.

Here’s What You’ll Need:

  • fresh strawberries, diced
  • sugar (white)
  • all-purpose flour
  • baking powder
  • salt
  • vanilla extract
  • milk
  • butter

Bonus Ingredients to Amp up Flavor

  • Feel free to incorporate other fresh berries – I like to add blueberries and blackberries
  • Substitute sugar for Stevia or another sugar replacement for a ‘healthier’ and/or diabetic alternative
  • Keep ice cream handy so that a scoop of cold vanilla can melt over the hot cobbler. HEAVENLY

The Recipe:

Fresh Strawberry Cobbler


  • 3 Cups Fresh Strawberries, Diced into bite size pieces
  • 1/2 – 3/4 Cup Sugar – for coating the berries before mixing
  • 1 Cup All Purpose Flour
  • 2 TSP Baking Soda
  • 1/2 TSP Salt
  • 1/2 Cup Sugar
  • 1 Cup Milk
  • 1/2 TSP Vanilla Extract
  • 1 Stick Butter, melted


  • Preheat oven to 375.
    In a bowl, add strawberries and ¾ cup sugar.
    Stir to coat strawberries in sugar and set aside for a few hours to overnight.
    In another bowl whisk together flour, baking powder, salt and sugar.
    Add in milk, vanilla extract and melted butter.
    Stir until combined. Lumps are fine!
    Grease a 9-inch casserole dish. I just use Cooking Spray.
    Pour batter evenly into dish.
    Spoon strawberries evenly on top of batter. Do NOT stir.
    Bake for 35-40 minutes or until golden.
    Serve warm with Vanilla Ice cream or Whipped Cream.
    Also perfect served cold – in the middle of the night while you hide from the kids

This recipe is something that reminds me of family and summer celebrations. I pull it out not only when my strawberries are going bad and I refuse to waste but also when I need a comforting hug. This is also my younger brother’s favorite recipe and he requests one he can keep to himself for his birthday every June.
