If you’re doing Weight Watchers, you shouldn’t have to sacrifice the sweets and treats! We made our Weight Watchers Rocky Road Cupcakes and they were a hit with friends and neighbors.

I am working towards losing weight, however, I do get the occasional sweet tooth! It’s always nice to treat yourself as a reward, right? Our Rocky Road Cupcakes are delicious and a great way to indulge.

Ingredients Needed:
1 cup Cocktail Peanuts
1 pkg chocolate cake mix
2 single serve cups plain Greek Yogurt
1 ½ cups Miniature Marshmallows
1 cup Hershey’s Sugar Free Chocolate Chips
1 pkg. Sugar Free JELL-O Chocolate Instant Pudding
1/4 cup powdered sugar
1 cup skim milk
1 tub Sugar Free Cool Whip
You will also need:

1. Heat oven 350ºF.

2. Chop 1/2 cup nuts.

3. In a mixing bowl combine the cake mix and Greek yogurt to form a cake batter.

4. Stir in chopped nuts and 3/4 cup marshmallows.

5. Spoon into a cupcake pan
6. Bake 20 to 25 min. or until toothpick inserted in centers comes out clean. Remove from pans to wire racks; cool completely.

7. Combine sugar free pudding mix, powder sugar and skim milk in large bowl with whisk.

8. Stir in Cool Whip and spread onto cupcakes. Top with remaining marshmallows and nuts.

9. Melt chocolate chips in a microwave safe bowl. Drizzle over cupcakes.

Weight Watchers Rocky Road Cupcakes
