Are you ready to make Double Chocolate Chip Pistachio Muffins? You will see we make our muffins just a bit bigger than bite sized. These are the perfect size for my son and myself! Our muffins make a great snack any time of day!
Ingredients Needed

- 2 cups all-purpose flour
- 1/2 cup cocoa
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup white granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1/2 cup buttermilk
- 3/4 cup vegetable oil
- ½ cup butter, melted
- 1 teaspoon vanilla
- 1 teaspoon maple syrup
- 1 cup semi-sweet chocolate chips, divided
- 3/4 cup pistachios, roughly chopped, divided
Instructions

Step 1: Preheat the oven to 350 F. Grease or line a 12-cup muffin pan.

Step 2: In a large bowl sift together the flour, cocoa, baking powder, baking soda and salt.

Step 3: In a separate bowl whisk together the oil, egg, sugars, buttermilk, butter, maple syrup and vanilla.

Step 4: Add the wet ingredients into the dry ingredients and mix until just combined.

Step 5: Fold in the 3/4 cup of the chocolate chips and 1/2 cup of the pistachios.

Step 6: Divide the batter equally into the muffins tin. Sprinkle the remainder of the chocolate chips and pistachios. Bake for 16-18 minutes, until a toothpick inserted comes out clean. Cool on wire rack before serving.
