Double Chocolate Chip Pistachio Muffins

Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup white granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1/2 cup buttermilk
  • 3/4 cup vegetable oil
  • ½ cup butter melted
  • 1 teaspoon vanilla
  • 1 teaspoon maple syrup
  • 1 cup semi-sweet chocolate chips divided
  • 3/4 cup pistachios roughly chopped, divided

Instructions
 

  • Step 1: Preheat the oven to 350 F. Grease or line a 12-cup muffin pan.
  • Step 2: In a large bowl sift together the flour, cocoa, baking powder, baking soda and salt.
  • Step 3: In a separate bowl whisk together the oil, egg, sugars, buttermilk, butter, maple syrup and vanilla.
  • Step 4: Add the wet ingredients into the dry ingredients and mix until just combined.
  • Step 5: Fold in the 3/4 cup of the chocolate chips and 1/2 cup of the pistachios.
  • Step 6: Divide the batter equally into the muffins tin. Sprinkle the remainder of the chocolate chips and pistachios. Bake for 16-18 minutes, until a toothpick inserted comes out clean. Cool on wire rack before serving.
