Super Moist Banana Bread

  • 1/2 cup (one stick) butter (softened)
  • 1-1/4 cups granulated sugar
  • 2 eggs
  • 4 Tbsp sour cream
  • 1-1/2 cups all- purpose flour (white)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1-1/2 cups (2-3) ripe bananas (mashed)


  • Grease 9" x 5" loaf pan.
  • Beat together butter and sugar.
  • Add eggs. Mix well.
  • Add sour cream, flour, baking soda, vanilla, and bananas. Mix well.

  • Pour into prepared loaf pan.
  • Bake at 350 degrees F for 45 - 55 minutes, or until toothpick in center comes out clean.
  • Cool on rack, and wrap in plastic wrap overnight to bring out the moisture in the bread.
  • Makes 1 loaf, cut into 14 slices about 5/8" thick each.

A couple of pro tips on making delicious, flavorful banana bread. One, the best bananas to use are over-ripe ones. The darker the skins get (without mold being present on them) the better. Mushy or dark spots on the banana within is okay, too, it makes the bread sweeter and moister.
Two, use good vanilla extract. I can't stress this enough, this is one recipe additive that will be money well spent, I promise!
Also, don't skip the sour cream. It adds to the moistness and flavor!
