Easy Keto-Friendly Avocado Egg Salad
Super easy Avocado Egg Salad Recipe that is Keto-Friendly. It can also be modified to be Weight Watchers-friendly!
- 2 medium avocados pitted and peeled
- 2 eggs boiled
- 1 tbsp full fat mayo
- 1/4 tsp mustard (you can use dijon for a different taste)
- dash paprika and/or black pepper
In a medium bowl combine boiled eggs, avocados, mayo, and mustard.
Mash with a fork. Spoon into serving bowls or onto plate garnish with paprika or black pepper and serve.
Notes:To make this dish Weight Watchers friendly, use one avocado instead of two, and replace mayo with nonfat Greek yogurt. One avocado is 8 points. The other ingredients will be zero points.
