In the last several years, I’ve moved towards a more plant-based diet. My goal is to eat in a healthier, more sustainable diet, for both myself and the planet. It also allows me to try new foods and to search for interesting new recipes to try. Although, sometimes trying to find all the ingredients can be daunting, but not anymore. If you’re not familiar with Purple Carrot, they are a plant-based meal delivery service. When you sign up for their subscription, you get to choose 3 dinners from their weekly meal offerings. After you make your picks, Purple Carrot will ship you a box full of all the ingredients you will need, along with a weekly recipe book. Each dinner serves two people.

There are currently three plans available, Quick & Easy, High Protein, and Chef’s Choice. You can choose one that works for your lifestyle, whether you want to go gourmet or need dishes you can prepare in 30 minutes or less. Or you can mix and match your meals. You can also add extras, which consist of two Breakfast or Lunch options.

My Dinner Selections

I’ve tried Purple Carrot once before I received the March 18th box and loved my selections. I was even more excited about this new box, which the brand kindly sent me. Inside I found three plant-based dinners; Snap Pea Kale Caesar, Gnocchi Primavera, and Black Bean Burger Crunch Wraps. Since I’m the only one in my current household, I get more than one use out of each meal. I have one helping as dinner and the second as my next day’s lunch.

Purple Carrot makes preparing each dinner very easy. All of your ingredients are packaged together. If an ingredient is used more than once, like garlic, or needs to lay flat, like the tortillas, it may come loose in the box.  Regardless, everything is clearly labeled so it’s easy to find even in your fridge.

Each recipe gets a two-page spread. On the left side, you will see a picture of the completed recipe, nutritional facts, tools and ingredients needed. The right-side features the recipe steps, along with accompanying pictures. There are also helpful tips or bonus info on specific ingredients.

Plant-based Black Bean Burger Crunch Wraps

I absolutely loved the variety of my plant-based dinners. One night I had a light kale salad with crispy chickpeas (shown in the opening photo of this post). The following night I had the most insanely delicious black bean burger in a wrap, complete with a chipotle aioli and arugula. On the last night, I had a hearty spring gnocchi with corn crema and zucchini. I would eat all of them again, but I especially want to figure out how to recreate the burger. It was that good.

Breakfast and Lunch Extras

Purple Carrot was also kind enough to send me one of their breakfast and lunch extras. I received the Peanut Butter Overnight Oats and the Buffalo Tofu Burritos. I was surprised to learn the breakfast came with four servings, which means I could enjoy almost all week.

Like the dinner selections, the plant-based breakfast and lunch recipes were easy to follow, with only two steps each. Each recipe also list its nutritional facts for reference.

I will say I was not a fan of the overnight oats. Not that they weren’t good, but I’m not really a fan of cold oatmeal. I’m not really a big oatmeal eater in general. I did like that it wasn’t a plan overnight oat, as it came with peanut butter, dried figs, and cacao nibs.

Of the two, the lunch burritos were my favorite. They were filling and full of layers of flavor. Eat bite gave me a bit of spice from the buffalo sauce, sour creaminess from the vegan ranch, and a nice crunch from the veggie slaw. I did add some extra buffalo sauce to my tofu to boost the spiciness. This is one meal I would order again or recreate at home.

I also found a little extra surprise in my box from one of my favor Chocolate brands, HU. I came across this brand on a trip to NYC last year and can’t get enough of their chocolate. Whenever I find HU in a local store, I always throw a couple of their chocolate bars into my cart. HU chocolate goodies are vegan, paleo, gluten-free magical chocolate bars. They are also free of palm oil, refined sugar, cane sugar, soy lecithin, vanilla extract, and sugar alcohols.

I gobbled up my Cashew Butter + Pure Vanilla Bean Chocolate Bar (not in one sitting). It hit the spot and satisfied my sweet tooth.       HU chocolate is so good. I recently tried their chocolate covered nuts and they were incredible.

    I believe I have heard of Purple Carrot before, they recipes do sound really yummy. I’m not a big oatmeal fan either.

      I always want to love oatmeal, but I just can’t seem to enjoy it.

  4. My son is a vegetarian and getting close to moving out on his own. I’ll have to let him know about this. We use Hello Fresh, but I’m very curious about Purple Carrot.

      Hello Fresh is great too, but I think I might like Purple Carrots vegan options a little better.
